Ingredients:

  • Vegetables: Potatoes, peas, carrots, bell peppers (use organic versions of these vegetables)
  • Tomatoes: 1 cup, finely chopped
  • Onion: ½ cup, finely chopped
  • Ginger-Garlic Paste: 1 tablespoon
  • Green Chilies: 1 teaspoon, finely chopped (adjust to taste)
  • Basoia Organic Spices: Turmeric powder, pav bhaji masala, red chili powder (optional, for extra heat)
  • Organic Butter
  • Fresh lemon juice
  • Fresh coriander leaves, chopped
  • Pav (bread rolls) – preferably organic, lightly toasted with butter
  • Salt to taste

Instructions:

  1. Boil and mash the potatoes, peas, carrots, and bell peppers.
  2. In a pan, heat butter and add cumin seeds. Once they sizzle, add onions and sauté until translucent.
  3. Add Basoia's ginger-garlic paste and green chilies. Cook for a minute.
  4. Stir in Basoia's organic spices (turmeric, pav bhaji masala, red chili powder).
  5. Add tomatoes and cook until soft.
  6. Mix in the mashed vegetables, add water to get the desired consistency, and cook for 10-15 minutes.
  7. Finish with lemon juice and coriander. Serve hot with toasted pav.

Serving Suggestion: Serve the Pav Bhaji with a side of chopped onions and a lemon wedge. Optionally, add a dollop of butter on top of the bhaji for extra richness.
